1980 | Planting the Tradition
She begins teaching traditional Japanese cooking, training the first generations of enthusiasts and professionals of the Japanese technique in Mexico.
1990 | The Birth of an Icon: Tori Tori
She founds the legendary Tori Tori in Polanco. The restaurant redefines the dining scene with award-winning architecture and rigorous product quality.
2010 | Cuisine in the Air
Selected by Aeroméxico and ANA to design the Premier Class menus on the transoceanic Mexico–Japan routes, bringing her technique to 30,000 feet of altitude.
2022 | Goodwill Ambassador
The Government of Japan awards her the title of Goodwill Ambassador for the Promotion of Japanese Cuisine — the highest honor for a chef outside Japan.
2024 – Present | Torobi by Kazu Kumoto
She launches her most personal project: Torobi. A space dedicated to "slow fire" table grilling, where the maturity of her technique meets the art of sharing without rushing.
